Steps to Make It

  1. Prepare the jasmine rice and allow it to cool slightly—try this basmati rice recipe.
  2. While the rice is cooling off, clean and rinse the cilantro in vinegar, and baking soda mix, then rinse a couple of times and allow the cilantro to dry.
  3. Squeeze the juice of a lemon, and pour it on the rice.
  4. Then chop the cilantro, and add it to the rice.
  5. Carefully and gently mix in the cilantro and lime juice well.

Storage and Reheating

Storage – Store by carefully transferring the rice to a glass container and placing a lid on it. Store in the refrigerator for up to three days.

Reheating – Reheat the lime rice lightly by transferring it to a medium-sized pan on low to medium heat. The cilantro will darken, and the flavor profile will change slightly after it’s been reheated. After reheating, add more chopped cilantro and lime juice to spice it up.
