Easy and Delicious Cilantro Lime Rice

Steps to Make It
- Prepare the jasmine rice and allow it to cool slightly—try this basmati rice recipe.
- While the rice is cooling off, clean and rinse the cilantro in vinegar, and baking soda mix, then rinse a couple of times and allow the cilantro to dry.
- Squeeze the juice of a lemon, and pour it on the rice.
- Then chop the cilantro, and add it to the rice.
- Carefully and gently mix in the cilantro and lime juice well.

Storage and Reheating
Storage – Store by carefully transferring the rice to a glass container and placing a lid on it. Store in the refrigerator for up to three days.
Reheating – Reheat the lime rice lightly by transferring it to a medium-sized pan on low to medium heat. The cilantro will darken, and the flavor profile will change slightly after it’s been reheated. After reheating, add more chopped cilantro and lime juice to spice it up.

- 3 cups Organic White Jasmine Rice
- 4.5 cups Filtered Water
- 3 tbsp Coconut oil
- 1 tsp Salt

- 1 cup Cilantro Leaves
- 1 whole Lime
- 1 pinch Salt
Instructions
Rice
- Step OneRinse the rice using a fine-mesh strainer. Rinse long enough to ensure the water comes out somewhat clear. I like filling a medium-sized bowl with fresh water to clean the rice gently. Rinse, and allow the water to drain in a fine-mesh strainer.
- Step TwoPour the water into the pot, and place on medium heat. Add the salt and coconut oil to the water and allow it to boil before adding the rice.
- Step ThreeCook on medium heat, and once the water evaporates, reduce the heat to low heat and place the lid on the pot. After 5 minutes, remove the lid and allow it to cook for 5 minutes until the rice is fluffy and cooked through.
- Step FourAllow the rice to cool down for a few minutes, and then gently transfer the rice to a medium bowl.
Cilantro Lime Mix
- Step FiveDestem, clean, and rinse the cilantro. Then rough chop the cilantro using a cutting board and chef's knife.Squeeze a lime, add the juice of the lime, and add to the rice with a pinch of salt.
- Step SixCarefully fold in the chopped cilantro and lime juice. Serve and enjoy with your favorite protein!
