Ingredients
  

Rice
  • 3 cups Organic White Jasmine Rice
  • 4.5 cups Filtered Water
  • 3 tbsp Coconut oil
  • 1 tsp Salt
Cilantro Lime Mix
  • 1 cup Cilantro Leaves
  • 1 whole Lime
  • 1 pinch Salt

Equipment

  • 1 Pot
  • 1 Fine Mesh Strainer
  • 1 Wooden Spoon
  • 1 Chef's Knife
  • 1 Cutting Board

Method
 

Rice
  1. Step One
    Rinse the rice using a fine-mesh strainer. Rinse long enough to ensure the water comes out somewhat clear. I like filling a medium-sized bowl with fresh water to clean the rice gently.
    Rinse, and allow the water to drain in a fine-mesh strainer.

  2. Step Two
    Pour the water into the pot, and place on medium heat. Add the salt and coconut oil to the water and allow it to boil before adding the rice.

  3. Step Three
    Cook on medium heat, and once the water evaporates, reduce the heat to low heat and place the lid on the pot.
    After 5 minutes, remove the lid and allow it to cook for 5 minutes until the rice is fluffy and cooked through.

  4. Step Four
    Allow the rice to cool down for a few minutes, and then gently transfer the rice to a medium bowl.

Cilantro Lime Mix
  1. Step Five
    Destem, clean, and rinse the cilantro. Then rough chop the cilantro using a cutting board and chef's knife.
    Squeeze a lime, add the juice of the lime, and add to the rice with a pinch of salt.

  2. Step Six
    Carefully fold in the chopped cilantro and lime juice. Serve and enjoy with your favorite protein!
