How To Make Chipotle’s Pollo Asado

Marinade Recipe

  • Fill a saucepan with water, set on high heat, and boil. Then, remove from the heat.
  • Destem and deseed the pepper, then place it in hot water to rehydrate it for 5 minutes, add it to a blender with some hot water, and blend.
  • Mix the cumin, coriander, and blended guajillo peppers before marinating chicken thighs in the mixture. Cover the chicken in the marinade and refrigerate for 1-2 hours.

Prepare The Pollo Asado Sofrito Sauce

  • While the chicken is marinating, prepare the sofrito sauce
  • Clean, dry, and give the onions, green pepper, and garlic a rough chop
  • Preheat a skillet and use avocado oil to sauté the onion, green pepper, garlic, and red chili pepper or red pepper flakes

Use a blender or food processor to blend the mixture with water, salt, and vinegar.

Set the sofrito sauce aside.

Sear or Grill The Marinated Chicken

Air fryer Pollo Asado

If you prefer an air fryer version of this pollo asado chipotle recipe, air fry it at 375 for 25 minutes. Flipping the chicken midway through.

  • 1/4 tsp Red Pepper Flakes

  • 1/4 tsp Smoked Paprika
  • 1 tbsp Water
  • 1 tbsp White Distilled Vinegar
  • 1/4 tsp Salt

Pollo Asado Topping

  • 1/8 tsp Chile Lime (Tajin)
  • 1/4 cup Cilantro Leaves and tender stems
  • 1 whole Lime, juiced

Instructions
 

Marinate The Chicken

  • Boil a cup of water and set it aside.
    To prepare a guajillo pepper for use, first remove its stem and seeds.
    Soften the guajillo pepper in the hot water for 5 minutes. Then, blend it in a food processor or blender with 1/4 cup of the hot water you used to soften it.
    Add the guajillo pepper puree, cumin, and coriander powder to the chicken in a large bowl. Coat the chicken well, cover the bowl, and refrigerate it for 1-2 hours to marinate.

Prepare The Sauce (Sofrito)

  • Clean and rinse the ingredients. Then, give the onions, bell pepper, and garlic a rough chop.
    Then, in a medium skillet, on low to medium heat, saute the onions, bell pepper, garlic, red pepper flakes (or red fresno pepper), salt, and smoked paprika until it's caramelized.
    Then, blend it in a food processor or blender with water and vinegar. Until it's finely chopped.

Sear The Chicken

  • Use a preseasoned cast iron skillet or cast iron grill to cook the chicken. Set it on medium-high heat and coat it with avocado oil.
    Once it's hot, place the chicken on the skillet, smooth side first. Try not to move the chicken. Keep an eye on it and adjust the heat if necessary.
    Flip the chicken after 5-7 minutes to ensure it's golden brown.
    Thighs are adequately cooked at 170°.
    Remove from the heat, and let it rest for 2 minutes.

Sauce The Chicken

  • Chop the chicken if you love bite sized chunks.
    Then add the sofrito sauce and carefully coat well.
    Top it off with fresh lemon juice and hand-chopped cilantro.
