Marinate The Chicken
- Boil a cup of water and set it aside.To prepare a guajillo pepper for use, first remove its stem and seeds.Soften the guajillo pepper in the hot water for 5 minutes. - Clean and rinse the ingredients. Then, give the onions, bell pepper, and garlic a rough chop.Then, in a medium skillet, on low to medium heat, saute the onions, bell pepper, garlic, red pepper flakes (or red fresno pepper), salt, and smoked paprika until it's caramelized. Then, blend it in a food processor or blender with water and vinegar. Until it's finely chopped.
Sear The Chicken
- Use a preseasoned cast iron skillet or cast iron grill to cook the chicken. Set it on medium-high heat and coat it with avocado oil.Once it's hot, place the chicken on the skillet, smooth side first. Try not to move the chicken. Keep an eye on it and adjust the heat if necessary. Flip the chicken after 5-7 minutes to ensure it's golden brown.Thighs are adequately cooked at 170°.Remove from the heat, and let it rest for 2 minutes.
Sauce The Chicken
- Chop the chicken if you love bite sized chunks.Then add the sofrito sauce and carefully coat well. Top it off with fresh lemon juice and hand-chopped cilantro.Serve and enjoy!
