17 Fall Soups and Stews You Must Try to Stay Cozy
Fall is my favorite season for so many reasons, especially here on the East Coast. I look forward to cool, crisp days, leaves turning beautiful fiery colors, the season’s fashion, and fall soups and stews simmering on the stove and warming up the kitchen.
Soup or stew, whether chicken, beef or veggie, always warms me up when the air turns chilly and keeps the dishes to a minimum.

I’m all about one-pot soups and stews that let me simmer everything together in my favorite Dutch oven. By the time dinner rolls around it’s ready to go with just one pot to wash.
I usually double the batch, fill airtight Mason jars, and stash them in the freezer for a week or two. That way I can grab a jar for lunch at work or a quick dinner on a busy night. It’s my favorite meal-planning shortcut.
Easy Fall Soups and Stews I’m Cooking This Season
I’m starting with asopao de camarones, where plump shrimp and rice simmer together in a tomato broth. If I’m in the mood for something vegetarian I make the black bean stew with onions, cumin and a squeeze of lime.
And when chicken and potatoes are calling, sudado de pollo simmers until the potatoes soak up every bit of the broth.
Puerto Rican Shrimp Stew (Asopao de Camarones)
Asopao de camarones, the Puerto Rican shrimp stew that sits somewhere between a soup and a rice dish. Plump shrimp in a tomato broth I could drink on its own.

Colombian Chicken Stew (Sudado de Pollo)
Sudado de pollo, chicken stewed with potatoes in tomato and sofrito until the potatoes soak up every bit of the broth. This is the one I grew up eating, always over white rice.

Sopa de lentejas with green lentils, sweet plantains and diced tomato. The crispy plantain and green onion crumble on top is my favorite part and I never leave it off.
