The Best Eggs

A U.S. Grade AA or A pasture-raised egg is the best for the perfect fry.

The grade AA or A quality indicates the egg’s freshness and firmness of the white as labeled by the USDA.

If you’ve ever noticed, the white becomes runny when an egg is closer to its expiration date. The egg yolk separates from the white and doesn’t stay in the middle—the egg yolk spreads and doesn’t stay centered on the white.

On the other hand, in a Grade AA or A egg, the yolk is either perfectly centered or slightly off-center, making a perfect-shaped fried egg.

Patured-raised eggs are also rich and have bright orange yolks.

Ingredients

  • Cooked Rice (leftover or fresh rice also works).
  • Eggs – pastured
  • Butter
  • Green Onion
  • Parsley for garnish

Equipment Needed For A Quick Recipe

  • Frying Pan
  • Spatula
  • Paring Knife or Chef Knife
  • Wooden Cutting Board

Top Tips

  • A great classic fried egg is either over-easy or medium, depending on your preference. An over-medium egg is runny, with a well-cooked white. An over-easy egg, only slightly cooked on both sides, may have a slightly soft white. Over-medium is perfect!
  • Preheat the pan before cooking the egg to prevent sticking to the pan.
  • Use a pan that doesn’t stick—stainless steel pans are great for this! The trick is to preheat the pan before adding the butter and cooking the egg.

Step-by-Step Instructions

Rice

Reheat the rice or make fresh jasmine rice. Follow this rice recipe for the best fluffy rice.

Serve on a plate before preparing the eggs.

For quick fried rice, reheat the cold rice and add soy sauce and sesame oil.

Serve with chopped green onions.

Eggs Over-Medium

  • Preheat a frying pan on medium-low heat.
  • Keep it on medium-low heat, add the butter, allow it to melt, and crackle slightly. The butter will brown slightly, which is delicious. It gives it a slight caramelized flavor.
  • Cook the egg for 2 minutes, until the white is slightly opaque. Tip: Do not touch the egg until you’re ready to flip.
  • Flip the egg using a spatula, place the spatula at the center of the egg, one egg at a time, and flip.
  • Then cook for two minutes on the other side.
  • Eggs are best immediately after cooking.

Side Dish Recommendations

Fried eggs and rice with air-fried sweet plantains or classic fried sweet plantains (maduros) is the perfect pairing because there’s a sweet and salty balance.

Rice, fried eggs, and this black bean recipe are another classic dish popular in several Latin countries.

This lentejas dish with this combo is also delicious.

Some other recipes go well with the fried eggs and rice combo.

  1. Chimichurri Rice
  2. Patacones
  3. Air fryer Yuca Fries
  4. Crispy Air Fryer Plantain Chips

FAQs

How Do I Know When The Medium-Egg Is Done?

You’ll usually know when the egg is done because the whites are cooked, and at the touch, the yolks are slightly soft, not hard, and have a slight bounce back.
