Step-by-Step Instructions For Homemade Fajita Veggies

Preparation

The cooking process is simple and straightforward. Slice the green peppers into thin strips, and slice the onions using the radial cut. In this post, I break down the steps to cut onions for a perfect fajita cut.

This combo is similar to the vegetarian fajitas you’ll find at a Chipotle restaurant.

  1. For best results, preheat a pan to medium-high heat or medium heat.
  2. Add the avocado oil to the hot pan, add sliced peppers and onions, and use slim tongs to flip the fajitas.
  3. Once the onions and peppers are caramelized and slightly tender, add a pinch of salt and serve.
  4. Optional: After a quick saute, broil in the oven until the fajitas are caramelized and golden brown.

Storage and Reheating

I love to store leftover veggies in an airtight container.

A quick method for reheating the sauteed peppers and onions is to place the fajitas on a sheet pan and broil.
