The Meals I Cook When I Need Something Light

When I want something light, I go straight to the recipes that don’t weigh me down. A bowl of chicken soup with herbs, a simple plate of rice with vegetables, or roasted cauliflower that gets crisp around the edges. These are the meals I cook when I need something light, the ones that feel easy on the stomach but still taste like real food.

Most of the time it’s whatever I already have in the fridge. A few carrots, a handful of cilantro, chicken that cooks quickly, or a pot of rice already warm on the stove. These meals come together without much planning and always feel good when I’m not in the mood for anything heavy.
