When I need a side dish fast, I don’t overthink it. I go straight to the recipes that come together with a few ingredients and don’t ask for much. These are the easy sides I make when I’m short on time, the ones I can pull together while the main dish cooks or when everyone’s already asking what’s for dinner.
Most of these start with ingredients I almost always have on hand. A bag of corn, a few carrots, a head of cauliflower, or a pot of rice already on the stove. They feel homey, simple, and familiar, and somehow always make the meal feel a little more complete.
The Sides I Lean on When Dinner Needs Something Extra
On busy nights, I don’t try to make anything complicated. A tray of carrots roasting in the oven, a bowl of creamed corn on the stove, or cauliflower that gets crisp around the edges is usually enough. These sides are quick, reliable, and easy to fit into any kind of dinner, whether it’s chicken, pasta, or a bowl of rice.
