Once the beef is browned and the paste melts into the juices, I finish it with a splash of young coconut water and a handful of chopped parsley. It stays light, clean, and gentle, but still has enough flavor to feel like a real meal.
Beef and Seasoning
- Ground beef, preferably 80/20 for the best balance of flavor and texture, but you can go leaner
- Create a paste or puree: Garlic powder but freshly minced garlic is preferred, fresh ginger, fresh spring onions and turmeric.
- White pepper for a subtle kick; black pepper can be used if tolerated
- Salt to taste
To Finish
- Chopped parsley for color and freshness
- Steamed white rice for serving
- Fresh lemon juice for brightness (if tolerated) or swap for young coconut water for a hint of acidity.

Step by Step Instructions
Start by making a quick paste. Add chopped spring onions, a little fresh ginger, a small amount of fresh turmeric, and either garlic powder or freshly minced garlic. Mash everything together until it forms a soft, fragrant paste. You can do this with the back of a spoon or a small mortar if you have one.
Warm a skillet over medium heat and add the ground beef. Let it sit for a minute or two so the bottom can brown a little before you start breaking it up. Once it begins to take on some color, gently break it apart with a spoon.
When the beef is halfway cooked, add your spring onion paste along with a pinch of salt and a little white pepper if you tolerate it. Stir so the paste melts into the beef and coats everything.
Keep cooking until the beef is fully browned and the paste has blended into the juices. Turn off the heat and pour in a splash of young coconut water. It adds a clean, slightly sweet flavor and keeps everything moist without adding any histamine triggers.
Serve the beef over warm white rice. Add chopped parsley on top for freshness. It’s simple, gentle on digestion, and still has a lot of flavor from the ginger, turmeric, and spring onions.

What To Serve This With
I serve this ground beef with fluffy white rice and freshly chopped cilantro and parsley. It’s also good with steamed vegetables, sautéed zucchini, or a small green salad with olive oil and herbs.
Make Ahead and Storage
This recipe is best made fresh. If you need to make it ahead, cook the rice and beef separately and store them in airtight containers in the fridge for up to two days. Reheat gently with a little water or lemon juice to keep it moist.
Keep in mind beef should not be stored and reheated to keep it low histamine.
