This ground beef with garlic and lemon is cooked with parsley, cilantro, and a homemade ginger and spring onion paste. Served with white rice for a low histamine meal.

Ingredients
  

Beef and Paste
  • 1 lb ground beef fresh, 80/20
  • 4 spring onions chopped
  • 1 small piece fresh ginger chopped
  • 1 small piece fresh turmeric chopped
  • 1 tsp garlic powder or 1 garlic clove minced
  • Salt to taste
  • White pepper a small pinch if tolerated
To Finish
  • A splash of young coconut water
  • Cooked white rice for serving
  • Chopped parsley

Equipment

  • 1 Skillet
  • 1 Wooden Spoon or Spatula
  • 1 Cutting Board and Knife

Method
 

Prep
  1. Chop the spring onions, ginger, and turmeric. Combine them with garlic powder or fresh garlic and mash into a soft paste using the back of a spoon or a small mortar or food processor.
Instructions
  1. Warm a skillet over medium heat and add the ground beef. Let it brown on the bottom before breaking it apart gently with a spoon.
  2. When the beef is halfway cooked, add the spring onion paste, salt, and a small pinch of white pepper if using. Stir until the paste coats the beef.
  3. Continue cooking until the beef is fully browned and the paste has blended with the juices in the pan.
  4. Turn off the heat and add a splash of young coconut water. Stir to combine.
  5. Serve over warm white rice and top with chopped parsley.
