Vegetarian pasta recipes are some of my favorites because they’re quick to make and always flexible. I could eat chimichurri pasta with extra parm any day, and my mom’s southern pasta salad is still one of the recipes I love the most. When I want something creamy, I’ll go for deviled egg pasta salad or a caesar version that never takes long to throw together.

A few use beans or chickpeas for extra protein, and some can be made vegan with a quick swap. They each have their own style, and they’re all recipes I reach for when I want pasta to be dinner.
