As we all know, we’re obsessed with pickles, and I just love a cold, creamy pasta salad with crunchy, tangy pickles! Pickle pico de gallo pasta salad has everything I love—macaroni, pickle pico de gallo, and a creamy dressing. It has crunch, a little tang, and comes together fast. Why You’ll Love This Recipe

  • Simple ingredients – Made with macaroni, pickles, and a creamy dressing.
  • Great for meal prep – Keeps well in the fridge.
  • Pairs with anything – Serve it with burgers, sandwiches, or grilled chicken.

What You’ll Need (With Substitutions)

  • Macaroni – Large elbow macaroni is my fav, and works best, but a smaller elbow, shells or rotini also work.
  • Pickle Pico de Gallo – The star of the dish! You can buy a premade pickle de gallo or make your own from scratch.
  • Chopped parsley – Adds freshness. Cilantro works too.
  • Mayo – For creaminess. Use light mayo if preferred.
  • Sour cream – Adds tangy richness. Greek yogurt works as a sub.
  • Grilled chicken (Optional) – For added protein.

I love adding cornichons—those tiny, tart French gherkins that I’m obsessed with. They’re crunchy, tangy, and honestly, they’re so cute and kind of decorative too! You can find cornichons at Trader Joe's.

How to Make It (Step-by-Step Instructions)

Step 1: Cook the Pasta
Cook the macaroni according to package instructions. Drain, then add a few ice cubes to the pasta while it sits in the colander. Set aside to cool.

Step 2: Mix the Dressing
In a large bowl, stir together mayo, sour cream, and Pickle Pico de Gallo until well combined.

Step 3: Combine Everything
Add the cooled macaroni and chopped parsley to the bowl. Stir well until everything is evenly coated.

Step 4: Customize It
Add grilled chicken if using.

Step 5: Serve & Store
Serve immediately or chill for at least 30 minutes for the best flavor. Store in the fridge for up to 3 days.
