These easy sandwich recipes are what I make when I’m standing at the fridge at noon with no plan, which is most days. I’d rather eat something I already have than think about it.

Most of these easy lunch sandwiches are not classic deli sandwiches. They’re sliders you bake by the tray, wraps you can eat one-handed, and salad fillings that keep for days. At least that’s my definition of girl dinner.

The Best Sandwich Fillings to Make Ahead

My easy sandwich recipes start with a filling that keeps. Tuna salad, chicken salad and corn tuna salad all hold three or four days in the fridge, so one bowl on Sunday covers most of my week.

And honestly? The filling matters more than the bread. Good tuna salad on plain white bread beats mediocre anything on a fancy roll.

Pull-apart sliders, every time. You assemble the whole tray at once, bake it, and cut them apart. No standing there building one sandwich after another i love these sandwich recipes for big groups, or big family breakfast.

They also reheat better than a cold sandwich holds up, which is why they end up in my lunch bag more than anything else here.

How to Pack Easy Sandwich Recipes So They Don’t Get Soggy

Two things fix this. Put the lettuce or the crunchy part in a separate little container and add it right before you eat. And if the filling is wet, spread a thin layer of butter on the bread first so it seals.

For the wraps, roll them tight and cut them in half so they hold their shape. A loose wrap falls apart by noon no matter what’s in it.
