This one-skillet onion and pepper kielbasa with rice is one of my favorite easy meals. Everything cooks in the same pan, which means less cleanup. The kielbasa is smoky, salty, and picks up a slight sweetness from the onions and peppers, making every bite so good.

Step 1: Prep Everything
- Slice the kielbasa into ¼-inch rounds.
- Thinly slice the onions and bell peppers.
- Mince the garlic.
Step 2: Sear the Kielbasa
Heat a large skillet over medium heat and add coconut oil. Once hot, add the sliced kielbasa and cook for 3-4 minutes per side until browned.
