One-Skillet Onion and Pepper Kielbasa with Rice

This one-skillet onion and pepper kielbasa with rice is one of my favorite easy meals. Everything cooks in the same pan, which means less cleanup. The kielbasa is smoky, salty, and picks up a slight sweetness from the onions and peppers, making every bite so good.

I love serving it over rice with freshly chopped parsley and a squeeze of lemon juice for a little brightness.

Ingredients You’ll Need (With Substitutions!)

For the Skillet:

  • Kielbasa – Sliced into rounds. Andouille sausage works too for a spicier option.
  • Coconut oil – Used for sautéing. Avocado oil works too.
  • Onions – Thinly sliced. Yellow, white, or sweet onions all work.
  • Bell peppers – Any color works, but red and orange are sweeter.
  • Garlic – Freshly minced for extra depth. Garlic powder works in a pinch.
  • Salt + black pepper – To taste.

For Serving:

  • Cooked jasmine rice – Reheat and serve with the kielbasa. Brown rice or quinoa work too. Try it with cilantro lime rice – it's so good!
  • Fresh lemon juice – Squeezed over at the end to brighten everything up.
  • Fresh parsley – For a little freshness.
  • Hot sauce (optional) – If you like a little heat.

Tip: Make It Spicy!

For a spicier version, use andouille sausage or add a pinch of cayenne while sautéing the onions and peppers.

How to Make One-Skillet Onion and Pepper Kielbasa

Step 1: Prep Everything

  • Slice the kielbasa into ¼-inch rounds.
  • Thinly slice the onions and bell peppers.
  • Mince the garlic.

Step 2: Sear the Kielbasa

Heat a large skillet over medium heat and add coconut oil. Once hot, add the sliced kielbasa and cook for 3-4 minutes per side until browned.

Step 3: Cook the Onions and Peppers

Add the onions and bell peppers to the skillet with the kielbasa. Stir and cook for 5-6 minutes, stirring occasionally, until they soften.

Step 4: Add Garlic in the Last 5 Minutes

Stir in the garlic and cook for the last 5 minutes, stirring often so it doesn’t burn. Season with salt and black pepper.

Step 5: Finish with Lemon

Turn off the heat and squeeze fresh lemon juice over the top. Stir everything together.

Step 6: Serve

Spoon the kielbasa, onions, and peppers over warm cooked rice. Sprinkle with fresh parsley and serve with hot sauce if you want some heat.

Tip: Want a Little More Flavor?

If you want even more depth, try adding a pinch of smoked paprika or a little cayenne for a bit of heat.

How To Serve It

I love this dish over a bowl of white rice, but it’s also good with brown rice or even quinoa. A little extra parsley and a squeeze of lemon juice on top makes it even better.
