Chimichurri, ají picante, sofrito, and adobo ranch each bring their own twist, whether it’s herby, spicy, or creamy. I also lean on citrusy recipes like Cuban pollo asado and the Chipotle pollo asado copycat, where the marinades do all the work to make chicken bright, and juicy.
