Southwest Ground Beef and Sweet Potato Skillet
You know those nights when you're just too tired to deal with a complicated dinner, and you really want to keep it down to a skillet? This Southwest ground beef and sweet potato skillet is my go-to.
It's super simple—just one pan and less than an hour. I coat the skillet with avocado oil, quickly caramelize the sweet potato chunks, and then cook the ground beef with a bunch of spices, sweet onion, garlic, tomatoes, and salsa verde.
The toppings really make it tho. A bit of sour cream, some sliced aguacate, and a sprinkle of cheese. It's nothing fancy, but it's homey, and perfect every time.

Step by Step Instructions
Prep
- Dice the onions and tomatoes, and mince the garlic.
- Peel and dice the sweet potatoes into big chunks.

Preheat the skillet to medium heat. Then, coat the bottom of the skillet with avocado oil, and cook until the sweet potato chunks are beautifully caramelized.
Set the caramelized sweet potatoes aside. Add the finely diced onions and cook until they're tender.
Add the ground beef until it's browned, then add the chopped tomatoes, tomato paste, spices, and minced garlic. Cook until the flavors develop for 15-20 minutes, then add the salsa verde, salt, and ground pepper to taste.
Add the sweet potato back in and stir and continue to cook until the potato is fork tender.
Top with shredded cheese while it's still hot and right before serving.

Garnish
Serve with avocado, a dollop of sour cream, and chopped fresh cilantro.
