Mexican Street Corn Recipes in Soups, Salads, and Quesadillas
If, like me, you have a deep love for Mexican street corn recipes, then you already know it’s not really about the cob. It’s the charred corn, the salty cotija, the lime, and that little hit of chile on top.
And honestly? Once I figured that out, elote started showing up everywhere. In my soup, in my pasta salad, tucked inside a quesadilla (that one is my favorite, hands down). Some of these are summer food, some I want in October, but every single one started as elote.
Start with the air fryer elote if you’re new to this. It’s the easiest one, and it’s still my favorite way to eat corn!

What Goes Into Mexican Street Corn
If you’ve had elote off a cart, then you already know exactly what I mean. It’s corn slathered with mayo and crema, topped with crumbly cotija, chile powder, and a big squeeze of lime.
Rich, sweet, salty, tangy, with a hint of spice. And honestly? That combination is what I’m actually after, not the cob (sorry, cob). Which is how it ended up in my soup, my pasta salad, and inside a quesadilla.
What to Use Instead of Cotija
Cotija is salty, dry, and crumbly, and it barely melts. If your grocery store doesn’t carry it, don’t skip the recipe!
Feta is my go-to swap. It crumbles the same way and it’s just as salty. Queso fresco works too, though it’s milder, so add a little extra salt. And parmesan is closer than you’d think, since cotija has that same parmesany bite. Just grate it fine and go light.
