When I’m in the mood for healthy Latin inspired dinner ideas, I usually run to my favorite rice bowls, a quick Mexican street corn chicken soup, or cheesy ground beef tacos.
They’re not too heavy, full of spice and fresh ingredients, and just easy to pull together. And when I’m craving something warm and filling, but still light enough to enjoy on a weeknight, these are the ones I reach for. Most of them come together fast, and they’re even better the next day (especially the soups, and skillets).
The best healthy dinners, to me, start with fresh ingredients and a little intention. I love building these meals from scratch when I can, but I’ll also use good broth, organic canned beans, or frozen greens when I need to.
These are the kinds of dinners that bring me back to life a little. They feel homey and relaxed, and they always work on a weeknight.
