When I need a side dish fast, I don’t overthink it. I go straight to the recipes that come together with a few ingredients and don’t ask for much. These are the easy sides I make when I’m short on time, the ones I can pull together while the main dish cooks or when everyone’s already asking what’s for dinner.

Most of these start with ingredients I almost always have on hand. A bag of corn, a few carrots, a head of cauliflower, or a pot of rice already on the stove. They feel homey, simple, and familiar, and somehow always make the meal feel a little more complete.
