Fall is my favorite season for so many reasons, especially here on the East Coast. I look forward to cool, crisp days, leaves turning beautiful fiery colors, the season’s fashion, and Fall Soups and Stews simmering on the stove and warming up the kitchen.
Soup or stew, whether chicken, beef or veggie, always warms me up when the air turns chilly and keeps the dishes to a minimum.
I’m all about one-pot soups and stews that let me simmer everything together in my favorite Dutch oven. By the time dinner rolls around it’s ready to go with just one pot to wash.
I usually double the batch, fill airtight Mason jars, and stash them in the freezer for a week or two. That way I can grab a jar for lunch at work or a quick dinner on a busy night. It’s my favorite meal-planning shortcut.
Soups and Stews I’m Cooking This Season
I’m starting with Asopao de Camarones where plump shrimp and rice simmer in tomato broth. If I’m in the mood for vegetarian I make the black bean stew with onions, cumin, and a squeeze of lime.
And when chicken and potatoes are calling Sudado de Pollo simmers until the potatoes soak up every bit of broth.
