Chipotle-Inspired Adobo Ranch Sauce
This Chipotle-inspired adobo ranch sauce is creamy, smoky, and just a little tangy. I first had it at Chipotle when they first released it in early summer of 2025 and knew right away I had to recreate it at home. I made it for my chicken fajita bowl, but now I keep a jar in the fridge for drizzling over tacos, salads, or even roasted vegetables. It’s the kind of sauce that makes you want to put it on everything.

Step by Step Instructions
Add the adobo chiles, lime juice, garlic, parsley, ranch seasoning, Mexican oregano, and black pepper to a food processor or blender. Blend until the chiles are smooth and everything is evenly mixed.
Scrape the mixture into a bowl and stir in the sour cream until fully combined. Taste and adjust with more lime or adobo if you want extra tang or heat.
Serve right away or refrigerate until ready to use.

Tips
Blending the chiles with lime juice, garlic, and seasonings makes the sauce so much faster to make, and evenly chops and mixes all the ingredients
If you’re not sure about the spice level, start with one chile and add more after tasting.
Let the sauce chill for at least 30 minutes before serving so the flavors come together.
For a thinner sauce you can drizzle, stir in a small splash of buttermilk until it reaches the consistency you want.
Keep it in the refrigerator in an airtight glass container and use within three days.
