Rice recipes that I love to make are the ones that remind me of my mom's cooking, of home, and just a well rounded dish. Growing up, rice was almost always dinner. My parents came up on rice, and they paired it with just about everything. I still remember my dad once serving my sister and me white rice with spaghetti, talk about carb overload.

But a good rice recipe can be the perfect dinner, especially when it soaks up a rich sauce. Even something simple like a classic Latin caramelized onions, steak, and rice dish with a side of sweet plantains.

Rice is easy to make, and it works with almost anything you put on the table, from chicken to veggies.

Why I Love These Rice Dishes

I’m sharing seasoned rice dishes from Puerto Rican styles to Tex-Mex taco skillets, eggs and rice (my weeknight savior), all kinds of bowls like my street corn chicken rice bowl and even my favorite Colombian rice pudding dessert.

These are the ones I come back to when I want something simple but still really good.
