- Finely slice the jalapeños with a mandolin or by hand. If you prefer a pickled jalapeño, try this pickled onions and jalapeños recipe.

Step One – The Layers For The Best Birria Nachos
I love to use a cast iron skillet for the crispiest and melty cheese nachos. Line the skillet with parchment paper for easy cleanup.
- Start with a layer of tortilla chips
- Then add the shredded cheese
- Then layer on the drained black beans
Set the cast iron skillet in the oven and set on broil on the lowest setting. Once the cheese melts and turns a golden brown remove from the oven.
Step Two
Once the cheese is melted and a light golden brown, top the nachos with shredded birria meat, the jalapeños, dollops of sour cream, and fresh cilantro.
I love to dip the nachos in the birria consomé, but if you’re serving a group, pour some of the birria sauce on the nachos immediately before serving.
Top Tips For The Best Nachos
- Use thick tortilla chips that can hold the ingredients and stay intact even after pouring on birria consomé.
- Add dollops of sour cream to the nachos for creaminess, but you can also use Mexican crema or try this cilantro garlic sauce.
- The key to a great nacho recipe is a melty cheese!

FAQs
What is the healthiest way to eat nachos?
Instead of traditional tortilla chips, which are deep-fried, I love to make these nachos with air fryer tortilla chips.
What is the difference between birria and barbacoa?
The difference is the seasoning. In birria, you have earthy chiles like ancho chiles, guajillo, and barbacoa, which are cooked in adobo, a slightly different flavor profile.
