Ingredients
  

Homemade Creamy Jalapeño Sauce (Taco Bell Copycat)
  • 1 cup mayonnaise
  • 2 tbsp pickled jalapeños minced
  • 1 tbsp pickle juice from pickled jalapeños
  • ¼ cup buttermilk
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp cocoa powder processed with alkali
  • 1 tsp minced onion
  • Salt to taste
Quesadilla
  • 4 Burrito-size flour tortilla—For a gluten-free option substitute a gluten-free burrito-size tortilla. I love this Siete tortilla.
  • 1 lb Sirloin steak sliced
  • 1 tbsp Avocado Oil for cooking
  • ½ cup Cheddar Cheese
  • ½ cup Mozzarella Cheese
  • ½ cup American Cheese
  • ½ cup Monterey Jack

Equipment

  • 1 Cast Iron Skillet
  • 1 Spatula
  • 1 Chef Knife
  • 1 Wooden Cutting Board
  • 1 Mixing Bowl
  • 1 Sauce Bowl

Method
 

Prep
  1. Slice the steak and season in a mixing bowl with onion and garlic powder, then set aside.
Sauce
  1. Prepare the sauce, combine all the ingredients in a small bowl, cover, and place in the fridge.
Quesadilla
  1. Preheat a skillet, coat the skillet with avocado oil, and sear the steak.
  2. Heat the flour tortillas in a skillet and spread a layer of jalapeño sauce.
  3. Add the steak and the cheese blend.
  4. Fold in half, and remove from heat once the tortillas are golden brown and the cheese has melted.
