Recaito is a fresh green Puerto Rican cooking base made with culantro, sweet peppers, onions, and garlic. It adds depth and flavor to so many classic dishes.

Ingredients
  

Herbs
  • 2 bunches culantro
  • 1 bunch cilantro
Aromatics
  • 1 sweet onions medium
  • 2 green bell peppers
  • 12 ajicitos dulces
  • 15 cloves Garlic 1 head
Oil
  • ½ cup extra virgin olive oil

Equipment

  • 1 Food processor
  • 1 Mixing Bowl
  • 1 Cutting Board
  • 1 Pairing Knife

Method
 

  1. Prep: Wash and trim all herbs. Peel the garlic. Rough chop onion and peppers.
  2. Add onion, garlic, green bell peppers, and ajicitos dulces to a food processor. Pulse until mostly smooth.
  3. Add culantro, cilantro, and olive oil. Blend again until you get a thick, green paste. Scrape down sides as needed.
  4. Spoon into jars or containers. Store in the fridge for up to 1 week or freeze for later use.
