Spinach and Feta Quesadillas

These spinach and feta quesadillas are made with sautéed spinach, crumbled feta, and mozzarella inside a crispy tortilla. Quick, easy, and great for any meal.

Ingredients
  

  • 2 large flour tortillas burrito size
  • 2 cups fresh spinach or 1 cup thawed frozen spinach, squeezed dry
  • ½ cup block feta cheese crumbled by hand
  • 1 clove garlic minced
  • 1 tbsp olive oil plus more for cooking
  • Salt & black pepper to taste
  • Red pepper flakes optional
  • ½ cup shredded mozzarella optional

Equipment

  • 1 Large skillet or non-stick pan
  • 1 Spatula
  • 1 Knife & cutting board
  • 1 Measuring cups & spoons

Method
 

  1. Sauté the Spinach: Heat 1 tbsp olive oil in a pan over medium heat. Add garlic and cook for a few seconds. Add spinach, stir until wilted, then season with salt, black pepper, and red pepper flakes (if using). Let cool slightly.
  2. Assemble the Quesadillas: Lay a tortilla flat and spread sautéed spinach over one half. Crumble block feta by hand on top, then fold in half.
  3. Cook the Quesadillas: Heat a non-stick pan over medium heat. Brush with olive oil or butter and cook the quesadilla for 2-3 minutes per side until golden brown.
  4. Serve: Cut into wedges and serve warm with tzatziki, yogurt, or a fresh salad.
