Ingredients
  

Eggplant
  • 1 large eggplant sliced into ⅓ inch rounds
  • 2 tbsp olive oil
  • Salt to taste
Topping
  • 1 cup tomato sauce
  • ½ tsp dried oregano
  • ¼ cup grated parmesan cheese
  • ¾ cup shredded low moisture mozzarella
  • 1 pinch fresh cracked pepper

Equipment

  • 1 Baking Sheet
  • 1 Chef Knife
  • 1 Cutting Board
  • 1 Pastry Brush

Method
 

Prep
  1. Preheat oven to 425°F. Slice eggplant into ⅓ inch rounds.
Instructions
  1. Arrange eggplant slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt.
  2. Bake for 10 minutes. Flip the slices and bake another 10 minutes until tender.
  3. Remove from oven and top each slice with tomato sauce, oregano, parmesan, and mozzarella.
  4. Set oven to low broil and cook for about 10 minutes until cheese is melted and lightly browned.
  5. Serve warm.
