Ingredients
  

Base
  • 1 medium sweet onion finely diced
  • 2 tbsp olive oil or avocado oil
Tomatoes and Broth
  • 5 oz tomato sauce half a 15 oz can
  • 1 can diced tomatoes 12 oz
  • 48 oz chicken broth 32 oz + 16 oz
Chicken and Beans
  • 2 chicken breasts
  • 1 can black beans 12 oz, rinsed and drained
Spices and Seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • Salt and black pepper to taste
Topping
  • Chopped parsley and cilantro

Equipment

  • 1 Dutch Oven Or large pot
  • 1 Wooden Cutting Board
  • 1 Knife
  • 1 Wooden Stirring Spoon

Method
 

Prep
  1. Dice the onion and rinse the black beans. Measure out all spices and seasonings before starting.
Instructions
  1. Warm oil in a large pot over medium heat. Add diced onion and cook until soft and slightly caramelized. Add a pinch of black pepper while they cook.
  2. Add onion powder, garlic powder, smoked paprika, cumin, salt, and pepper. Stir and cook for 2 to 4 minutes to bring out their flavor.
  3. Stir in the tomato sauce and diced tomatoes. Let them cook together for about 4 to 5 minutes.

  4. Add the chicken breasts and coat them in the tomato mixture. Pour in the chicken broth and stir well. Simmer for 10 minutes.

  5. Add the black beans and simmer for another 10 minutes.

  6. Remove the chicken from the pot, shred with two forks, and return it to the soup. Stir everything together and taste for seasoning.
