  • ½ cup Avocado Oil
  • ½ quart Water Enough to cover the yuca
  • 1 tsp Salt

Equipment

  • 1 Large Pot
  • 1 Slotted Spoon
  • 1 Cutting Board
  • 1 Sharp Knife or Forks

Method

  1. Step One:
Fill a stockpot or Dutch oven with filtered water, enough water to cover the yuca.
Then add the yuca and salt and boil. Y
ou’ll want the yuca to be fork-tender before air frying. Otherwise, you’ll end up with tough yuca.
  2. Step Two:
Remove the fork-tender yuca with a slotted spoon from the pot of water and place them on a baking sheet lined with parchment paper.
Tip: Once you have the tender yuca, remove the tough thread. You’ll find the thread in the middle of the yuca. Otherwise, you’ll have a tough thread in your yuca fries.
As you’re removing. the tough thread, you can use a fork to pull the yuca apart into chunky fries.
Then, pat them with paper towels to remove some of that water. Don’t worry about having imperfect yuca pieces. Those are the best!
  3. Step Three:
Lightly coat the yuca with avocado oil and place them in the air fryer basket.
Do not overcrowd and place them in a single layer. Set the air fryer to 390 degrees for 20 minutes. Halfway through, flip the yuca.
  4. Step Four:
Remove these crispy cassava fries and serve! Enjoy!
This is such a delicious and healthier way to enjoy crispy yuca.
