These honey garlic herb butter roasted carrots are baked until golden and tossed with warm butter, herbs, and honey. A simple side for the holidays or everyday dinners.

Ingredients
  

Carrots
  • 4-5 carrots peeled and sliced slightly on a diagonal
  • 1 tbsp butter or olive oil
  • Salt and black pepper to taste
Glaze
  • 1 tbsp raw honey or maple syrup
  • 2 cloves garlic minced
  • 1 tsp white wine vinegar or apple cider vinegar
  • ½ tsp chopped thyme
  • ½ tsp chopped rosemary

Equipment

  • 1 Large Baking Sheet
  • 1 Small Mixing Bowl
  • 1 Tongs

Method
 

Prep
  1. Preheat oven to 425°F. Peel and slice carrots.
Instructions
  1. Spread the carrots on the baking sheet. Add butter, salt, and pepper.
  2. Roast for 15 minutes until they start to soften and brown lightly.
  3. In a small bowl, mix honey, minced garlic, white wine vinegar, thyme, and rosemary.

  4. Remove the carrots from the oven, pour the glaze over them, and toss gently.
  5. Return to the oven and roast for another 15 minutes until tender and coated with a light glaze.
