Healthy ground chicken taco soup with black beans, corn, and a blend of taco spices. Cooked in one pot and topped with cilantro, cheddar, and lime.

Ingredients
  

Base and Protein
  • 2 tbsp olive oil
  • 1 medium sweet onion diced
  • 1 lb ground chicken
Spices and Seasoning
  • 1 tsp cumin powder
  • ¼ tsp coriander
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • tsp cracked black pepper
  • Salt to taste
Vegetables and Beans
  • 3 garlic cloves minced (added at the end)
  • 1 can diced tomatoes 14–15 oz
  • 8 oz tomato sauce
  • 1 can black beans drained and rinsed
  • 1 cup frozen roasted sweet corn
Liquids
  • 1 quart chicken broth
Toppings
  • Fresh cilantro chopped
  • Shredded cheddar cheese
  • Lime wedges

Equipment

  • 1 Soup Pot
  • 1 Wooden Spoon
  • 1 Wooden Cutting Board
  • 1 Knife
  • 1 Microplane

Method
 

Prep
  1. Dice onion and mince garlic, keeping garlic set aside for later.
  2. Drain the black beans.
  3. Chop cilantro and shred cheddar cheese for topping.
Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until caramelized.
  2. Add ground chicken and brown, breaking it up as it cooks.
  3. Stir in cumin, coriander, onion powder, garlic powder, and black pepper. Cook for 30 seconds.
  4. Add diced tomatoes and tomato sauce. Cook for 4 to 5 minutes.
  5. Add the drained black beans, corn, and chicken bone broth. Simmer on medium heat for 20 minutes.
  6. Stir in fresh garlic and cook for 1 more minute.
  7. Taste and season with salt.
  8. Serve hot with cilantro, cheddar, and lime.
