Elote Air Fryer Recipe: My Mexican Street Corn Obsession

This air fryer version of the classic elote corn recipe is simple and delicious!

Ingredients
  

Air Fryer Corn
  • 4 Fresh Ears of Corn (or frozen corn cobs)
  • 1 tbsp Avocado Oil
  • 1 qt Filtered Water
Ingredients For Elote Recipe
  • ½ cup Mayonnaise
  • ½ cup Crema or Sour Cream
  • ½ cup Cotija Cheese
  • 1 Lime optional
  • 1 tbsp Chopped Cilantro
Elote Seasoning
  • tsp Chili Powder
  • tsp Cumin Powder
  • tsp Paprika
  • tsp Lime Chili Powder Optional

Equipment

  • 1 XL Air Fryer
  • 1 Pastry Brush
  • 1 Bowl or Baking Dish For Corn
  • 1 Tongs
  • 3 Small Bowls

Method
 

Elote Air Fryer
  1. Remove the husks and corn silk, and soak the fresh corn in filtered water for 20 minutes.
  2. Brush the corn with avocado oil.
  3. Preheat the air fryer for at least a minute, and place the corn in the air fryer basket in a single layer. Flip halfway through.
Prepare The Elote Ingredients
  1. Crumble the cotija cheese in a small bowl and set aside.
  2. Set the mayo and crema or sour cream aside.
  3. Mix the dry seasoning in a bowl and set aside.
Final Steps
  1. Remove the corn from the air fryer.
  2. Brush each ear of corn with a healthy coat of mayonnaise using a pastry brush, followed by crema or sour cream.
    Then add the salty cotija cheese and sprinkle on the elote seasoning and fresh cilantro.
  3. If you love lime on elote (I do!), squeeze fresh lime juice on the elote and serve.

Notes

Tip

Separate the elote seasoning layers.
You can make a mayonnaise mixture by mixing the spices in a bowl with the mayonnaise and sour cream and then brushing the mixture on the corn.
