Dill Pickle Pasta Salad

Dill pickle pasta salad is made with macaroni, diced dill pickles, sweet onions, and a creamy dressing. Serve it fresh with burgers, sandwiches, or grilled chicken.

Ingredients
  

  • 2 cups large elbow macaroni
  • 1 cup dill pickles chopped
  • ¼ cup white onion finely diced
  • cup mayo
  • cup pickle brine or pickle vinegar
  • ½ tsp fresh dill finely chopped (very light amount) optional
  • 1 tbsp fresh parsley chopped

  • 1 Large Pot
  • 1 Colander
  • 1 Cutting Board
  • 1 Sharp Knife
  • 1 Mixing Bowl
  • 1 Measuring cups & spoons
  • 1 Large spoon for mixing

Method
 

  1. Prep: Bring a large pot of heavily salted water to a rolling boil. Add 2 cups large elbow macaroni and cook until al dente. Drain, add a few ice cubes, and set aside in the colander to cool.
  2. In a large bowl, mix 1.5 cups mayo, ⅓ cup pickle brine, finely diced white onion, and cracked black pepper until smooth.
  3. Stir in the chopped dill pickles and fresh dill (if using).
  4. Add the cooled macaroni to the bowl and stir until fully coated in the dressing.
  5. Serve immediately or chill before serving. Store in the fridge for up to 3 days.

Notes

Top Tip:

For the best flavor, let the pasta salad sit in the fridge for at least 30 minutes before serving. This gives the pickles and brine time to blend into the dressing!
