Crispy potatoes with everything dill tahini made with small white potatoes, broiled until browned and served with a tahini dressing.

Ingredients
  

Potatoes
  • 1.5 lbs small white potatoes cut into quarters
  • Water for boiling
  • 2 tbsp olive oil
  • Salt to taste
Tahini Sauce
  • ¼ cup tahini
  • ¼ cup water
  • Juice of 1 lemon
  • tsp everything dill seasoning
  • Salt to taste
To Finish
  • ¼ small red onion thinly sliced (optional)
  • ½ tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped

Equipment

  • 1 Pot
  • 1 Mixing Bowl
  • 1 Wooden Cutting Board
  • 1 Paring Knife
  • 1 Whisk
  • 1 Baking Sheet

Method
 

Prep
  1. Clean and scrub potatoes, then cut into quarters. Slice onion and chop herbs.
Instructions
  1. Add potatoes to a pot of salted water and bring to a boil. Cook until just fork tender. Do not overboil.
  2. Drain and let potatoes dry slightly.
  3. Transfer to a baking sheet, drizzle with olive oil and salt, and toss to coat. Arrange in a single layer.
  4. Broil, flipping as needed, until golden and crispy.
  5. In a bowl, whisk together tahini, water, lemon juice, everything dill seasoning, and salt until smooth.
  6. Transfer potatoes to a serving dish. Pour sauce over the top.
  7. Add sliced onion and finish with parsley and dill.
