Juicy cilantro lime chicken thighs marinated with fresh lime juice, onion, garlic, cumin and topped with fresh cilantro and lime juice. Great for skillet, oven, or grill.

Ingredients
  

Marinade and Seasoning
  • lbs boneless skinless chicken thighs
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp roasted cumin powder
  • Pinch of salt
  • ¼ tsp freshly cracked black pepper
  • ¼ cup lime juice
  • 2 tbsp extra virgin olive oil
Toppings
  • Chopped fresh cilantro
  • Extra lime juice for serving

Equipment

  • 1 Skillet or Griddle
  • 1 Large Mixing Bowl
  • Knife and Cutting Board

Method
 

  1. If using skin-on chicken thighs, trim excess fat. Chop cilantro for topping and juice limes.
  2. In a large bowl, combine garlic powder, onion powder, roasted cumin powder, salt, black pepper, lime juice, and olive oil. Add chicken thighs and toss to coat. Marinate for at least 30 minutes or up to 2 hours.
  3. Heat a griddle or skillet over medium-high heat. Sear chicken on the first side until golden, then flip and sear the other side. Reduce heat to medium and cook until chicken is fully cooked through.
  4. Serve with white rice, extra lime juice, and plenty of chopped cilantro.
