Prepare
- Fill two large pots with water and lots of salt.Remove the husks and corn silk, and then add the corn to the pot of waterAdd pasta to the second, and boil.
Pasta
- Boil the pasta until it’s al dente, roughly 10-12 minutes. Follow the instructions on the box. Every pasta has slightly different cooking times.
- Drain and allow to cool; add a couple of ice cubes to the pasta to allow it to cool. Place in the refrigerator and allow it to cool.

Corn
- Boil for 10 minutes
- Preheat a large saute pan on high heat, then quickly brown the cooked corn to slightly golden brown corn. Set aside and allow to cool.

- Slice the corn off the cob with a sharp paring knife and place it in the mixing bowl.
Final Steps
- While the pasta is cooling, combine all the ingredients, including the lime juice, mayo, crumbled cheese, lime juice, crema, spices, salt and corn, and mix well. Then, add the pasta and coat it well.

- Top with freshly sliced cilantro, and serve!
