Gluten-free Chicken Meatballs

Meatballs submerged in tomato sauce remind me of the quintessential dinner with the family.

For years, I’d watched my mom make these with breadcrumbs and wondered, can I make an equally delicious gluten-free version?

You’d be surprised to find that these are, in fact, gluten-free chicken meatballs because they’re so full of flavor and juicy.

I experimented with several different recipes until I found the perfect recipe. In these, I swapped the breadcrumbs with nuts, fresh oregano, fresh rosemary, and fresh sage. 

The nuts have an excellent way of binding the ground chicken and holding them together.

What makes this recipe gluten-free?

Meatballs generally need a binding agent, typically egg and bread crumbs. This recipe replaces that with nuts. 

Can I use ground turkey?

Turkey is also an excellent option for this meatball recipe. You can also find ground turkey in supermarkets. 

What can i pair this Gluten-free chicken meatball recipe with?

Meatballs are delicious when paired with pasta or smothered on a hero. Yum! Meatballs are also delicious with spaghetti squash, known as nature’s spaghetti. This spaghetti squash recipe is a huge time saver. Hint. No need to cut through an entirely raw squash. 

Fresh herbs vs. dried herbs.

Fresh oregano is bright and has a kick to it. Dried oregano can sometimes leave a bitter aftertaste. Using fresh herbs gives this dish a depth of flavor and elevates this gluten-free chicken meatball recipe. 

However, if you can only get your hands on dried oregano, you can include dried oregano over fresh oregano. 

What kind of nuts can I use in this recipe?

I prefer either raw or dry roasted nuts and mixed lightly salted nuts. Almond meal or flour is excellent for this recipe. 

Combine cashews with almonds and macadamias. The nuts will give the meatballs the fattiness and a kick of flavor.

  • 1 Convection Toaster Oven
  • 1 Spatula
  • 1 Food processor
  • 1 Knife
  • 1 Spoon
  • 1 Large bowl
  • 1 Small Baking Dish

Ingredients

  • 2 lbs Ground Chicken
  • 1/4 tsp Sea Salt
  • .5 cup Almond Meal
  • .5 cup Whole Cashews
  • 3 ounce Green Onions
  • 7 cloves Garlic
  • 1 tbsp Olive Oil
  • 15 ounce Canned Tomato Sauce organic
  • 1 tsp Fresh oregano
  • 1 tsp Fresh rosemary
  • 1 tsp Fresh Sage

Instructions

  • Prepare by preheating the oven to 375 degrees.
  • Rinse green onions and add to the food processor along with cashews, almond meal, garlic, fresh oregano, sage, rosemary, and 1/8 tsp salt. Pulse grind until finely chopped.
  • In a separate bowl, place ground chicken. Transfer your freshly processed mixture from the food processor to the bowl and fold it in.
  • Continue to blend the ground chicken and chopped ingredients until fully incorporated.
  • Add olive oil to the baking dish to prevent the meatballs from sticking. Once the chicken is well blended, take a large spoon and mold half-cup-sized portions into your baking dish. Sprinkle the remaining salt on meatballs before placing it in the oven.
  • 1. Place in the oven and bake for 15 min at 375 degrees. Remove from the oven and drizzle all contents of the tomato sauce on the meatballs.
    2. Return to the oven for 20 min.
    3. Remove from the oven and rotate the meatballs and return to the oven for 10 minutes.

Notes

I prefer to use organic ground chicken. Works with either chicken breast ground chicken, dark meat, or ground turkey. 
Top off with grated parmesan cheese for a special final touch. This recipe is an excellent gluten-free option.
