Rabo Encendido (Cuban Oxtail Stew)
Rabo encendido, or Cuban oxtail stew, is slowly cooked in a rich tomato sauce until the meat is tender and falls off the bone. The sauce is infused with flavorful ingredients such as garlic, onion, peppers, sazon, and cumin and is often served with freshly cooked rice and maduros or tostones.
