Feta and Tomato Frittata

Soho, New York, has a small Greek bakery with some of the best Greek desserts- baklava, galaktoboureko- and every so often, they would have this incredible feta and tomato frittata with imported feta cheese from Greece. I worked across the street from the bakery, and after quitting my job, the cravings kicked in. So I decided to make it at home. Trader Joe’s has incredible feta cheese options.

What is feta?

Feta cheese is made from goat or sheep’s milk and brined. The brine gives feta cheese this incredible saltiness. If you’re not a fan of feta, you swap it for mozzarella cheese or cheddar cheese. 

Is there a dairy-free option?

If you’re looking for a dairy-free option, swap the butter with coconut or olive oil. 

Replace the feta cheese with almond or cashew cheese. 

What is a feta and tomato frittata?

A frittata is similar to a quiche or omelet, and it can be baked or made on the stovetop. It’s an egg-based dish that can include meats or vegetables. 

Is this low-carb?

This frittata is low-carb. The eggs, cheese, and tomatoes have a nominal amount of sugar and carbohydrates. Add a vegetable to add fiber.

Equipment

  • 1 Convection Toaster Oven
  • 4 Ramekins
  • 1 Fork
  • 1 Small Baking Dish

Ingredients

  • 8 eggs Eggs
  • 1/8 tsp Sea Salt
  • 8 ounces Feta
  • 1 cup Grape tomatoes
  • 1/8 tsp oregano
  • 2 tbsp Grass-fed butter

Instructions

  • Step 1
    Preheat oven to 375
  • Step 2
    Chop the feta block into smaller pieces and evenly place (2 oz) in each ramekin.
    Clean and rinse tomatoes and slice them in half. Then evenly distribute in each ramekin.
    Sprinkle salt and oregano in each ramekin and top with a dab of butter.
  • Step 3
    Place ramekins on the baking pan and add water to the pan around the ramekins. Place in oven and bake for 10 minutes at 375.
  • Step 4
    Crack eggs into a large bowl, add salt, and whisk.
    After 10 minutes, remove the pan and ramekins from the oven, and add eggs to all ramekins - evenly.
    Reduce temp to 300, return the pan and ramekins to the oven and bake for 10 minutes.

    Let cool and enjoy!
